Zero Carb Mini Pizza Recipe

Ingredients:

1 cup shredded mozzarella cheese

2 tbsp cream cheese

¾ cup almond flour (or coconut flour for nut-free)

1 tsp baking powder

1 egg

½ tsp garlic powder

½ tsp Italian seasoning

Pinch of salt

Toppings (optional):

Sugar-free pizza sauce or tomato paste

More mozzarella or cheese blend

Pepperoni slices, cooked chicken, or veggies

Oregano or basil for garnish

Instructions:

  1. Make the Dough (Fathead Style):

In a microwave-safe bowl, combine mozzarella and cream cheese.

Microwave for 45–60 seconds until melted. Stir until smooth.

Add almond flour, baking powder, egg, garlic powder, and salt.

Mix well until a dough forms (knead with your hands if needed).

  1. Shape the Crust:

Roll the dough into a rectangle or circle between parchment paper sheets.

Place it on a baking tray lined with parchment paper.

Pre-bake at 400°F (200°C) for 8–10 minutes until slightly golden.

  1. Add Toppings:

Spread a thin layer of sugar-free tomato sauce.

Add shredded cheese and any toppings you like.

Sprinkle with oregano or Italian seasoning.

  1. Bake Again:

Return to the oven for another 5–7 minutes until cheese is bubbly and golden.

  1. Slice & Serve:

Let it cool for a minute, then cut into squares or mini pieces as in the photo.

💡 Tips:

For extra crispiness, flip the crust after pre-baking before adding toppings.

You can use cauliflower or chicken crust for other zero-carb variations.

Store leftovers in the fridge and reheat in a skillet or oven — it stays crispy!
