Ingredients:
2 sheets puff pastry (thawed)
250 g (about 1 cup) ricotta cheese
150 g (about 1 cup) feta cheese, crumbled
200 g (about 2 cups) spinach, chopped (fresh or frozen and drained)
1 small onion, finely chopped
1 clove garlic, minced
1 egg (for the filling)
Salt and pepper to taste
1 egg yolk (for brushing)
Sesame seeds (optional, for topping)
👩🍳 Instructions:
- Prepare the Filling:
In a skillet, sauté onion and garlic in a little olive oil until soft.
Add chopped spinach and cook until wilted (if using fresh).
Let cool, then mix with ricotta, feta, egg, salt, and pepper.
- Assemble the Pastry:
Place one sheet of puff pastry on parchment paper.
Spread the spinach mixture evenly over it, leaving a small border.
Cover with the second sheet of pastry.
Seal the edges with a fork.
- Cut and Brush:
Slice into squares (as shown in the image).
Brush the top with beaten egg yolk.
Sprinkle sesame seeds on top (optional).
- Bake:
Preheat oven to 200°C (400°F).
Bake for 25–30 minutes, until golden and puffed.
- Serve:
Let it cool slightly, then serve warm. Perfect for snacks, brunch, or picnics!
