Ingredients
For the Biscuits:
2 cups all-purpose flour
1 tbsp baking powder
1 tsp sugar
½ tsp salt
½ cup (1 stick) cold butter, cubed
¾ cup cold buttermilk
1 cup shredded cheddar cheese (divided — half for topping)
For the Sausage Filling:
1 lb ground breakfast sausage (pork or spicy, your choice)
1 tbsp butter or oil (optional)
½ tsp black pepper
½ tsp garlic powder
½ cup shredded cheddar cheese
Instructions
- Preheat Oven:
Set your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Cook the Sausage:
In a skillet over medium heat, cook sausage until browned and fully cooked.
Add pepper and garlic powder.
Drain excess fat, then stir in ½ cup shredded cheddar cheese while warm. Set aside.
- Prepare the Biscuit Dough:
In a large bowl, whisk flour, baking powder, sugar, and salt.
Cut in cold butter using a pastry cutter or fork until mixture is crumbly.
Add cold buttermilk and mix until just combined — don’t overwork.
Turn dough onto a floured surface and gently pat to about ¾-inch thick.
Cut into circles with a biscuit cutter (about 2½ inches wide).
- Assemble:
Place half the biscuits on the prepared sheet.
Spoon some cooked sausage mixture on each bottom biscuit.
Top with another biscuit and lightly press the edges together.
Sprinkle remaining cheddar cheese over the tops.
- Bake:
Bake 12–15 minutes, until golden brown and cheese is bubbly.
- Serve Warm:
Brush the tops with melted butter if desired.
Serve hot — delicious with a drizzle of honey or gravy on the side!
