Ingredients:
2 cups all-purpose flour
1 cup sugar
1 tbsp baking powder
½ tsp salt
3 large eggs
1 cup pineapple juice (from canned pineapple)
½ cup vegetable oil or melted butter
1 cup crushed or small pineapple chunks (drained)
1 tsp vanilla extract
Instructions:
- Preheat your oven to 180°C (350°F). Grease and flour your baking tins or use foil trays.
- In a bowl, mix together the flour, sugar, baking powder, and salt.
- In another bowl, whisk the eggs, pineapple juice, oil (or butter), and vanilla extract until smooth.
- Combine the wet ingredients with the dry ingredients. Stir gently until you get a smooth batter.
- Fold in the pineapple chunks evenly.
- Pour the batter into your prepared tins.
- Bake for 30–35 minutes or until golden and a toothpick inserted in the center comes out clean.
- Let cool before serving.
Optional: Brush the top with a little pineapple syrup for extra moisture and shine.
