Ingredients
For the scallops:
1 lb (450 g) large sea scallops, patted dry
1 tbsp olive oil
1 tbsp butter
Salt and pepper to taste
For the zesty lime cilantro sauce:
2 tbsp butter
2 cloves garlic, minced
1/2 cup heavy cream
Juice and zest of 1 lime
1/4 cup fresh cilantro, finely chopped
Salt and pepper, to taste
Optional: a pinch of red pepper flakes for spice
👩🍳 Instructions
- Prepare the scallops:
Pat scallops completely dry with paper towels.
Season both sides with salt and pepper.
- Sear the scallops:
Heat olive oil and butter in a large skillet over medium-high heat until very hot.
Add scallops (don’t overcrowd) and sear for about 1.5–2 minutes per side, until golden-brown crust forms.
Remove scallops and set aside on a plate.
- Make the lime cilantro sauce:
In the same pan, reduce heat to medium. Add 2 tbsp butter and minced garlic. Sauté until fragrant (about 30 seconds).
Pour in heavy cream and lime juice; stir to combine.
Add lime zest, cilantro, and season with salt and pepper. Simmer gently for 1–2 minutes until slightly thickened.
- Combine:
Return scallops to the pan and spoon sauce over them.
Let them warm for about 1 minute, then remove from heat.
- Serve:
Plate scallops with sauce drizzled generously on top.
Garnish with extra cilantro or lime wedges for a fresh finish.
