Salmon & Shrimp in White Wine Garlic Butter Sauce

Ingredients:

For the Salmon & Shrimp:
– 2 salmon fillets (skin-on or skinless)
– ½ lb (225g) large shrimp, peeled & deveined
– 1 tsp paprika
– ½ tsp garlic powder
– ½ tsp Italian seasoning
– ½ tsp salt
– ½ tsp black pepper
– 2 tbsp olive oil
– 1 tbsp butter

#### **For the White Wine Garlic Butter Sauce:**
– 4 tbsp butter (divided)
– 4 garlic cloves, minced
– ½ cup dry white wine (e.g., Sauvignon Blanc or Pinot Grigio)
– ½ cup heavy cream (or half-and-half)
– ¼ cup chicken or seafood broth
– 1 tbsp lemon juice
– 2 tbsp fresh parsley, chopped
– ¼ tsp red pepper flakes (optional)

Instructions:

1. Season & Sear the Salmon & Shrimp:
1. **Pat dry** the salmon and shrimp with paper towels.
2. **Season** both sides of the salmon and shrimp with paprika, garlic powder, Italian seasoning, salt, and black pepper.
3. **Heat olive oil and 1 tbsp butter** in a large skillet over medium-high heat.
4. **Sear the salmon** (skin-side down first if using skin-on) for **3-4 minutes per side** until golden. Remove and set aside.
5. **Cook the shrimp** in the same pan for **1-2 minutes per side** until pink. Remove and set aside.

2. Make the White Wine Garlic Butter Sauce:
1. **Melt 2 tbsp butter** in the same skillet.
2. **Sauté garlic** for 30 seconds until fragrant.
3. **Deglaze with wine**, scraping up browned bits, and simmer for **2-3 minutes** to reduce slightly.
4. **Add broth, cream, lemon juice, and red pepper flakes**. Simmer for **3-4 minutes** until slightly thickened.
5. **Stir in remaining 2 tbsp butter** and parsley until melted and creamy.

#### **3. Finish & Serve:**
1. **Return salmon and shrimp** to the skillet, spooning sauce over them.
2. **Simmer for 1-2 minutes** to heat through.
3. **Garnish with extra parsley** and serve immediately over pasta, mashed potatoes, or with crusty bread.
