Roasted Sweet Potatoes

Ingredients

4 medium sweet potatoes (peeled and cut into cubes)

3 tablespoons butter (melted)

3 tablespoons brown sugar (or honey)

2 tablespoons maple syrup (optional, for extra glaze)

½ teaspoon cinnamon

¼ teaspoon nutmeg (optional)

½ teaspoon salt

A pinch of black pepper (optional)

1 teaspoon vanilla extract (optional)

Nonstick cooking spray or a little oil for the pan

Instructions

  1. Preheat Oven
    Preheat your oven to 400°F (200°C).
  2. Prepare the Sweet Potatoes
    Peel and cut the sweet potatoes into even cubes (about 1-inch pieces).
  3. Make the Glaze
    In a bowl, mix together:

Melted butter

Brown sugar

Maple syrup (if using)

Cinnamon, nutmeg, salt, and pepper

Vanilla extract (optional)

  1. Coat the Potatoes
    Toss the sweet potato cubes in the glaze mixture until well coated.
  2. Roast
    Spread the potatoes evenly on a baking tray lined with parchment paper or lightly greased. Roast for 30–40 minutes, turning halfway through, until they’re tender and caramelized with golden brown edges.
  3. Serve
    Serve warm as a side dish — perfect for holiday meals, barbecues, or cozy dinners.

Tips

For extra crispiness, broil for the last 2–3 minutes.
