Ingredients
4 medium sweet potatoes (peeled and cut into cubes)
3 tablespoons butter (melted)
3 tablespoons brown sugar (or honey)
2 tablespoons maple syrup (optional, for extra glaze)
½ teaspoon cinnamon
¼ teaspoon nutmeg (optional)
½ teaspoon salt
A pinch of black pepper (optional)
1 teaspoon vanilla extract (optional)

Instructions
- Preheat Oven
Preheat your oven to 400°F (200°C). - Prepare the Sweet Potatoes
Peel and cut the sweet potatoes into even cubes (about 1-inch pieces). - Make the Glaze
In a bowl, mix together:

Brown sugar
Maple syrup (if using)

- Coat the Potatoes
Toss the sweet potato cubes in the glaze mixture until well coated. - Roast
