Potato-Stuffed Flatbread

**Ingredients:**
– 2 cups flour (you can use whole wheat or all-purpose flour)
– 1/2 teaspoon salt
– 3/4 cup warm water
– 2 medium-sized potatoes, boiled and mashed
– 1 small onion, finely chopped
– 1 green chili, finely chopped (optional)
– 1/2 teaspoon cumin powder
– 1/2 teaspoon red chili powder
– 1/4 teaspoon turmeric powder
– Fresh coriander leaves, chopped
– Salt to taste
– Oil or ghee for cooking

**Instructions:**
1. In a mixing bowl, combine the flour and salt. Gradually add warm water and knead until you form a soft dough. Cover and let it rest for 20-30 minutes.
2. In another bowl, mix the mashed potatoes, chopped onion, green chili, cumin powder, red chili powder, turmeric powder, coriander leaves, and salt. Adjust seasoning to your taste.
3. Divide the dough into equal-sized balls. Roll each ball into a small circle using a rolling pin.
4. Place a spoonful of the potato mixture in the center of each circle. Fold the edges of the dough over the filling and seal it tightly.
5. Gently flatten the stuffed dough ball and roll it out again into a flatbread, being careful not to let the filling spill out.
6. Heat a skillet or griddle over medium heat. Cook each flatbread on both sides, brushing with oil or ghee, until golden brown and cooked through.
7. Serve warm with yogurt, chutney, or your favorite dip.
