Ingredients
4 large potatoes, peeled and cubed
2 tbsp butter
1/3 cup milk or cream
1 egg
1/2 cup grated cheese (cheddar, mozzarella, or parmesan)
1–2 garlic cloves, minced (optional)
1 tsp dried herbs (thyme, parsley, rosemary, or mixed herbs)
Salt & pepper to taste
A little oil or melted butter for brushing
Instructions
- Cook the Potatoes
Boil potatoes in salted water until tender. Drain well. - Mash Until Smooth
Add butter, milk, salt, pepper, cheese, and garlic (if using). Mash until creamy. - Add the Egg
Let the mixture cool slightly, then mix in the egg. Stir well. - Prepare the Muffin Tin
Line a muffin tray with paper cups or grease each cavity with butter or oil. - Fill & Shape
Spoon the mashed potato mixture into each cup.
Smooth the top, then use a fork to create ridges (this helps them get crispy). - Bake
Bake at 400°F (200°C) for 25–30 minutes, or until golden and crispy on top. - Optional
Brush the tops lightly with melted butter and sprinkle extra herbs before baking for extra flavor.
