Peach Dumpling Cobbler

Ingredients:

2 cans (8 oz each) refrigerated crescent roll dough

4 fresh peaches, peeled and sliced (or use canned peach halves, drained)

1 cup unsalted butter (2 sticks)

1 ½ cups granulated sugar

1 cup brown sugar

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

1 can (12 oz) lemon-lime soda (like Sprite or 7-Up)

Instructions:

  1. Preheat the oven to 350°F (175°C).
    Grease a 9×13-inch baking dish.
  2. Prepare the dumplings:

Unroll the crescent dough and separate into triangles.

Place one peach slice (or half) on each triangle and roll it up, starting from the wide end.

Arrange the rolled dumplings in the prepared dish.

  1. Make the syrup:

In a medium saucepan, melt the butter over medium heat.

Add both sugars, cinnamon, and vanilla. Stir until smooth and combined (about 2–3 minutes).

Pour this mixture evenly over the dumplings.

  1. Add the soda:

Slowly pour the lemon-lime soda around the edges of the pan (not directly on top of the dumplings).

  1. Bake:

Bake uncovered for 35–40 minutes, or until golden brown and bubbly.

  1. Serve warm:

Spoon over some of the syrup from the bottom of the pan.

Delicious served with a scoop of vanilla ice cream or whipped cream!
