Parmesan Baked Potatoes

Ingredients:

1 kg (2.2 lbs) baby or small potatoes, washed and halved

3 tbsp olive oil or melted butter

½ cup grated Parmesan cheese

½ cup shredded mozzarella or cheddar (optional for extra melt)

2 cloves garlic, minced

1 tsp salt

½ tsp black pepper

½ tsp paprika (optional)

2 tbsp chopped parsley (for garnish)

🔥 Instructions:

  1. Preheat Oven:
    Set your oven to 200°C (400°F).
  2. Prepare the Potatoes:
    Boil the potatoes for 8–10 minutes until just tender. Drain well.
  3. Season:
    In a bowl, mix olive oil (or butter), garlic, salt, pepper, and paprika. Toss the potatoes until evenly coated.
  4. Add Parmesan:
    Sprinkle Parmesan onto the bottom of a foil-lined baking dish or individual foil packets.
    Place potatoes cut side down on top of the cheese layer.
  5. Bake:
    Bake uncovered for 25–30 minutes, or until the bottoms are crispy and golden.
  6. Add Cheese Topping (optional):
    Sprinkle mozzarella or more Parmesan on top and broil for 3–5 minutes until bubbly.
  7. Garnish & Serve:
    Remove from the oven, sprinkle with parsley, and serve hot.

🍽️ Tips:

For extra crispiness, skip pre-boiling and bake longer (40–45 minutes).

Add a drizzle of sour cream or ranch on top for extra flavor.

You can also mix in herbs like thyme or rosemary for an aromatic twist.
