Low Calorie Greek Yogurt Cake

Ingredients

2 cups (450g) Greek yogurt (plain, low-fat or 0%)

3 large eggs

1/2 cup (60g) cornstarch

1/2 cup (100g) sugar (or sweetener equivalent)

1 tsp vanilla extract

Optional: zest of 1 lemon

🍰 Instructions

  1. Preheat oven to 170°C (340°F).
  2. Line a loaf pan with parchment paper.
  3. In a bowl, whisk eggs + sugar until smooth.
  4. Add Greek yogurt and vanilla, mix well.
  5. Sift in the cornstarch and whisk until the batter is lump-free and silky.
  6. Pour the batter into the pan.
  7. Bake 45–55 minutes, until the top is golden and the center is set but still slightly jiggly.
  8. Let cool completely before removing from the pan (it firms up as it cools).
  9. Dust with powdered sugar (optional).

🍽 Tips

For extra lemon flavor: add 1 tbsp lemon juice + zest

For sweeter taste: increase sugar to 3/4 cup

Chill in the fridge 2 hours for a cheesecake-like texture
