Ingredients
2 cups (450g) Greek yogurt (plain, low-fat or 0%)
3 large eggs
1/2 cup (60g) cornstarch
1/2 cup (100g) sugar (or sweetener equivalent)
1 tsp vanilla extract
Optional: zest of 1 lemon
🍰 Instructions
- Preheat oven to 170°C (340°F).
- Line a loaf pan with parchment paper.
- In a bowl, whisk eggs + sugar until smooth.
- Add Greek yogurt and vanilla, mix well.
- Sift in the cornstarch and whisk until the batter is lump-free and silky.
- Pour the batter into the pan.
- Bake 45–55 minutes, until the top is golden and the center is set but still slightly jiggly.
- Let cool completely before removing from the pan (it firms up as it cools).
- Dust with powdered sugar (optional).
🍽 Tips
For extra lemon flavor: add 1 tbsp lemon juice + zest
For sweeter taste: increase sugar to 3/4 cup
Chill in the fridge 2 hours for a cheesecake-like texture
