Ingredients:2 lbs beef stew meat, cubed2 tbsp olive oil1 large onion, diced4 garlic cloves, minced5 carrots, sliced4 celery stalks, chopped3 potatoes, diced1 cup corn kernels (fresh or frozen)1 cup green beans, chopped1 can (14 oz) diced tomatoes10 cups beef broth2 bay leaves1 tsp dried thyme1 tsp paprikaSalt and pepper, to tasteFresh parsley, chopped (for garnish)Instructions:1. In a large stockpot, heat olive oil over medium-high heat. Brown beef cubes on all sides, then remove and set aside.2. In the same pot, sauté onion and garlic until fragrant.3. Add carrots, celery, and potatoes. Cook for about 5 minutes.4. Return beef to the pot and stir in diced tomatoes, beef broth, bay leaves, thyme, paprika, salt, and pepper.5. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until beef is tender.6. Add corn and green beans. Cook for another 15–20 minutes.7.
