Ingredients:
3 large potatoes
3 tbsp butter (plus more for topping)
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp chopped parsley (fresh or dried)
Salt, to taste
Black pepper, to taste
Instructions:
- Preheat oven to 200°C (400°F).
- Wash and scrub the potatoes thoroughly, then pat dry.
- Pierce each potato a few times with a fork.
- Rub potatoes with olive oil and sprinkle with salt. Wrap each in foil and place on a baking tray.
- Bake for 50–60 minutes, or until tender when pierced with a fork.
- Meanwhile, melt 3 tbsp butter in a pan. Add minced garlic and sauté for 30 seconds until fragrant. Stir in parsley.
- Remove potatoes from the oven, unwrap, and make a slit on top of each. Gently press the sides to open slightly.
- Drizzle the garlic butter inside and top with a small cube of butter. Sprinkle with more parsley if desired.
- Serve hot and enjoy the soft, buttery goodness!
