- Peel and cut potatoes:
Peel the potatoes and cut them into thin sticks (like fries). Try to keep them even for uniform cooking. - Soak in water:
Place the cut fries in cold water for 30 minutes to remove excess starch. This step makes them crispier. - Dry completely:
Drain and pat dry with a kitchen towel or paper towels. They must be dry before frying. - (Optional) Egg trick:
Lightly beat 1 egg and toss the fries in a very thin coating of egg before frying. This gives extra crispiness and color. - First fry (blanching):
Heat oil to 150°C (300°F). Fry the potatoes for about 5 minutes, until soft but not browned. Remove and let them rest. - Second fry (crisping):
Increase oil heat to 190°C (375°F). Fry again for 2–3 minutes, until golden and crisp. - Season and serve:
Drain on paper towels, sprinkle with salt and your favorite seasonings, and serve hot with ketchup or dipping sauce.
