Egg Salad Sandwich

Ingredients

4 large eggs

2 tbsp mayonnaise (or Greek yogurt for a lighter option)

1 tsp Dijon mustard (optional)

Salt and black pepper to taste

1 tbsp butter (optional, for toasting bread)

2 slices of bread (white, whole grain, or your choice)

👩‍🍳 Instructions

  1. Boil the eggs

Place eggs in a saucepan and cover with water.

Bring to a boil, then reduce heat and simmer for 10 minutes.

Transfer to cold water and let them cool completely.

  1. Peel and mash

Peel the eggs and place them in a bowl.

Mash with a fork to your desired texture (chunky or smooth).

  1. Mix

Add mayonnaise, mustard, salt, and black pepper.

Stir well until creamy and evenly mixed.

  1. Toast the bread

Toast both slices of bread to golden brown.

Optionally, spread a little butter for extra flavor.

  1. Assemble the sandwich

Spoon the egg mixture over one slice of toast.

Top with the other slice or leave open-faced as shown.

Sprinkle freshly ground black pepper on top.

Finely chopped chives or green onions

A pinch of paprika

A few slices of tomato or lettuce for freshness
