Ingredients:
4 large eggs (separated)
3 tbsp butter
3 tbsp all-purpose flour
1 cup warm milk
1/2 cup sugar
1 tsp vanilla extract
A pinch of salt
Powdered sugar (for dusting)
Instructions:
- Prepare the Base:
Melt butter in a saucepan over medium heat.
Stir in flour and cook for about 1 minute.
Gradually whisk in warm milk until smooth and thickened. Remove from heat.
- Add Flavor:
Stir in vanilla extract and half of the sugar.
Let the mixture cool slightly, then whisk in the egg yolks one at a time until smooth.
- Beat Egg Whites:
In a separate bowl, beat egg whites with a pinch of salt until soft peaks form.
Gradually add remaining sugar and continue beating until stiff peaks form.
- Combine:
Gently fold the egg whites into the yolk mixture, being careful not to deflate the batter.
- Bake:
Preheat oven to 375°F (190°C).
Spoon the batter into greased or paper-lined muffin cups or ramekins (about 3/4 full).
Bake for 15–20 minutes until puffed and golden.
- Serve:
Dust with powdered sugar and serve immediately while warm and fluffy!
