creamy lemon squares

Ingredients

For the Crust

2 cups graham cracker crumbs (or digestive biscuits, crushed)

1/2 cup melted butter

1/4 cup sugar

For the Creamy Lemon Filling

2 cans (14 oz each / 397g) sweetened condensed milk

1 cup fresh lemon juice

2 tbsp lemon zest

4 large egg yolks

Instructions

  1. Prepare the Crust
  2. Preheat your oven to 350°F (175°C).
  3. Mix graham crumbs, sugar, and melted butter until it resembles wet sand.
  4. Press firmly into a 9×13 inch baking pan.
  5. Bake for 10 minutes, then remove and let cool slightly.
  6. Make the Lemon Cream Filling
  7. In a bowl, whisk the egg yolks until smooth.
  8. Add the sweetened condensed milk and whisk until creamy.
  9. Mix in the lemon juice and lemon zest until the mixture thickens.
  10. Bake
  11. Pour the lemon filling over the warm crust.
  12. Bake for 15–18 minutes, or until the center is set but still slightly jiggly.
  13. Cool completely, then refrigerate for at least 3 hours (overnight is best).
  14. Serve

Slice into squares.

Optional: dust with powdered sugar or top with whipped cream.

Tips

⭐ For a stronger lemon flavor, add more zest.
⭐ Make sure bars are fully chilled before cutting — they slice much cleaner.
