Baked Oatmeal Delight

Ingredients

2 cups rolled oats

2 cups milk (any kind — dairy, almond, or oat milk)

2 large eggs

1/3 cup honey or maple syrup

2 tbsp melted butter (or coconut oil)

1 tsp vanilla extract

1 tsp cinnamon

1 tsp baking powder

1/4 tsp salt

1/2 cup chopped nuts (pecans or walnuts)

Instructions

  1. Preheat oven to 180°C (350°F) and lightly grease a baking dish.
  2. Mix dry ingredients: In a bowl, combine oats, cinnamon, baking powder, and salt.
  3. Add wet ingredients: In another bowl, whisk together milk, eggs, honey (or syrup), melted butter, and vanilla.
  4. Combine: Pour the wet mixture over the oats and stir until evenly mixed.
  5. Top: Sprinkle the chopped nuts evenly on top.
  6. Bake: Place in the oven and bake for 35–40 minutes, or until golden and set in the center.
  7. Cool & serve: Let cool slightly, then slice into squares. Enjoy warm or chilled!

Optional Add-ins

½ cup berries, chopped apples, or bananas

A pinch of nutmeg for extra warmth

A drizzle of peanut butter or yogurt on top when serving
