Ingredients:
3 cups mashed potatoes (cold leftovers work best)
1 cup shredded cheese (mozzarella or cheddar)
2 tbsp chopped parsley (or green onions)
1 egg
1/2 cup breadcrumbs
2 tbsp flour
Salt and pepper to taste
1/2 tsp garlic powder (optional)
Oil or butter for frying
Instructions:
- Prepare the Mixture:
In a large bowl, mix the mashed potatoes, cheese, parsley, egg, flour, and seasonings.
Stir until you get a smooth, firm mixture (add a bit more flour if too soft). - Shape the Patties:
Scoop about 2 tablespoons of the mixture and form small round or oval patties.
Coat lightly with breadcrumbs for extra crispiness. - Fry Until Golden:
Heat oil or butter in a non-stick pan over medium heat.
Fry each patty for 3โ4 minutes per side, until golden brown and crispy. - Serve:
Sprinkle with fresh parsley and serve warm โ perfect with sour cream or garlic dip.
