Ingredients:

3 cups mashed potatoes (cold leftovers work best)

1 cup shredded cheese (mozzarella or cheddar)

2 tbsp chopped parsley (or green onions)

1 egg

1/2 cup breadcrumbs

2 tbsp flour

Salt and pepper to taste

1/2 tsp garlic powder (optional)

Oil or butter for frying

Instructions:

  1. Prepare the Mixture:
    In a large bowl, mix the mashed potatoes, cheese, parsley, egg, flour, and seasonings.
    Stir until you get a smooth, firm mixture (add a bit more flour if too soft).
  2. Shape the Patties:
    Scoop about 2 tablespoons of the mixture and form small round or oval patties.
    Coat lightly with breadcrumbs for extra crispiness.
  3. Fry Until Golden:
    Heat oil or butter in a non-stick pan over medium heat.
    Fry each patty for 3โ€“4 minutes per side, until golden brown and crispy.
  4. Serve:
    Sprinkle with fresh parsley and serve warm โ€” perfect with sour cream or garlic dip.
