Ingredients

4 large potatoes

1 egg (optional trick for crispiness)

Salt to taste

Oil for frying (vegetable or sunflower oil)

Optional spices: paprika, black pepper, garlic powder, or parsley

  1. Peel and cut potatoes:
    Peel the potatoes and cut them into thin sticks (like fries). Try to keep them even for uniform cooking.
  2. Soak in water:
    Place the cut fries in cold water for 30 minutes to remove excess starch. This step makes them crispier.
  3. Dry completely:
    Drain and pat dry with a kitchen towel or paper towels. They must be dry before frying.
  4. (Optional) Egg trick:
    Lightly beat 1 egg and toss the fries in a very thin coating of egg before frying. This gives extra crispiness and color.
  5. First fry (blanching):
    Heat oil to 150°C (300°F). Fry the potatoes for about 5 minutes, until soft but not browned. Remove and let them rest.
  6. Second fry (crisping):
    Increase oil heat to 190°C (375°F). Fry again for 2–3 minutes, until golden and crisp.
  7. Season and serve:
    Drain on paper towels, sprinkle with salt and your favorite seasonings, and serve hot with ketchup or dipping sauce.

Double frying is key for perfect crispness.

Don’t overcrowd the pan.

For spicy fries, sprinkle paprika and a little chili powder right after frying.
