Ingredients

For the dough:

2 cups all-purpose flour

1 tsp baking powder

½ cup sugar

1 tsp vanilla extract

1 egg

¾ cup butter (cold, cut into cubes)

For the cream filling:

2 cups milk

½ cup sugar

2 eggs

3 tbsp cornstarch

1 tsp vanilla extract

1½ cups whipped cream (or heavy cream, whipped stiff)

For topping:

Powdered sugar for dusting

  1. Prepare the dough:
    Mix flour, baking powder, and sugar in a bowl. Add the cold butter and rub with your fingers or a pastry cutter until crumbly. Add the egg and vanilla, knead briefly until smooth. Divide into two portions — one slightly larger.
  2. Make the cream filling:
    In a saucepan, whisk together milk, eggs, sugar, cornstarch, and vanilla.
    Cook over medium heat, stirring constantly, until thick and creamy.
    Let cool, then fold in whipped cream gently.
  3. Assemble the cake:

Roll out the larger dough portion and place it into a greased springform pan, covering the bottom and sides.

Pour in the cream filling.

Roll out the smaller dough portion and place it on top, or crumble it over for a rustic look.

  1. Bake:
    Bake in a preheated oven at 350°F (175°C) for 30–35 minutes, until golden on top.
  2. Finish:
    Cool completely, then dust with powdered sugar before serving.

You can add lemon zest to the cream for a fresh note.
