Ingredients:
1 cup brown sugar (packed)
1 cup granulated sugar
4 large eggs
1 cup vegetable oil (or melted butter)
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla extract
2 cups chopped pecans (plus a few extra for topping)
Instructions:
- Preheat the oven:
Set oven to 350°F (175°C). Grease a 9×13-inch pan or two loaf pans and line with parchment paper. - Mix wet ingredients:
In a large bowl, whisk together the eggs, brown sugar, white sugar, and oil until smooth and creamy. - Add dry ingredients:
Stir in the flour, baking powder, salt, and vanilla extract until just combined — do not overmix. - Fold in pecans:
Gently mix in the chopped pecans, ensuring even distribution throughout the batter. - Bake:
Pour the batter into the prepared pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown. - Cool & serve:
Allow to cool for at least 15 minutes before slicing. Serve warm or at room temperature.
Optional Glaze (for extra sweetness):
Mix 1 cup powdered sugar with 2 tablespoons milk and ½ teaspoon vanilla, then drizzle over cooled bread.
Tip: Toast the pecans lightly before adding them to enhance their nutty flavor.
