Super Soft Milk Bread Rolls (Japanese-Style Dinner Rolls)

Ingredients:

3 ½ cups (440g) all-purpose or bread flour

3 tbsp (40g) sugar

2 ¼ tsp (1 packet) instant yeast

1 tsp salt

1 cup (240ml) warm milk

1 large egg

4 tbsp (60g) softened butter

For brushing:

1 egg yolk + 1 tbsp milk (egg wash)

Optional: sesame seeds or a pinch of salt on top

Instructions:

  1. Activate the Yeast

In a bowl, combine warm milk and sugar.

Add yeast, stir gently, and let sit for 5–10 minutes until foamy.

  1. Make the Dough

In a large bowl, combine flour and salt.

Add yeast mixture and the egg.

Mix until dough forms, then add softened butter gradually.

Knead 10–12 minutes until smooth and stretchy.

  1. First Rise

Cover the dough and let it rise in a warm place for 1 hour, or until doubled in size.

  1. Shape the Rolls

Punch down the dough and divide into 6 equal balls (as shown in your photo).

Place them into a greased baking dish close together.

Cover and let rise again for 40–60 minutes.

  1. Prepare for Baking

If desired, score the tops gently with a blade before baking (helps shape).

Brush lightly with egg wash.

Sprinkle sesame seeds or a little coarse salt if you like.

  1. Bake

Bake in a preheated oven at 180°C (350°F) for 18–22 minutes, until golden brown.

  1. Finish

Brush with melted butter when hot for extra softness and shine!

✅ Tips for Extra Soft Rolls:

Add 1–2 tbsp milk powder for richer flavor (optional)

Don’t overbake — remove when just golden

Keep covered with a clean towel while cooling to retain softness
