4 cups (1 liter) milk
1 cup sugar
4 tablespoons cornstarch (or cornflour)
2 eggs
1 teaspoon vanilla extract
A pinch of salt
Ground cinnamon (for topping)
Instructions
- Mix the base
In a saucepan (off the heat), combine milk, sugar, cornstarch, eggs, vanilla, and a pinch of salt. Whisk until smooth with no lumps. - Cook until thick
Place the saucepan over medium heat and stir constantly. The mixture will gradually thicken — this takes about 5 minutes. - Pour and smooth
Once thick and creamy, remove from heat and pour the mixture into a glass dish or individual cups. Smooth the surface with a spatula. - Sprinkle the topping
Dust generously with ground cinnamon (or cocoa powder if preferred). - Chill and serve
Let it cool to room temperature, then refrigerate for at least 30 minutes before serving.

For extra creaminess, you can add 1 tablespoon of butter after cooking.
Substitute part of the milk with coconut milk for a tropical twist.
