Soft Pineapple Cake Recipe

Ingredients:

2 cups all-purpose flour

1 cup sugar

1 tbsp baking powder

½ tsp salt

3 large eggs

1 cup pineapple juice (from canned pineapple)

½ cup vegetable oil or melted butter

1 cup crushed or small pineapple chunks (drained)

1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 180°C (350°F). Grease and flour your baking tins or use foil trays.
  2. In a bowl, mix together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk the eggs, pineapple juice, oil (or butter), and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients. Stir gently until you get a smooth batter.
  5. Fold in the pineapple chunks evenly.
  6. Pour the batter into your prepared tins.
  7. Bake for 30–35 minutes or until golden and a toothpick inserted in the center comes out clean.
  8. Let cool before serving.

Optional: Brush the top with a little pineapple syrup for extra moisture and shine.
