🍽 Ingredients:
For the Mushrooms:
500g (about 1 lb) button or cremini mushrooms, cleaned and halved
1/2 cup all-purpose flour
1/2 cup unsweetened plant milk (almond, soy, oat, etc.)
1 cup breadcrumbs (panko for extra crunch)
1 tsp garlic powder
1/2 tsp smoked paprika (optional)
1/2 tsp salt
1/4 tsp black pepper
1–2 tbsp olive oil (if baking)
For the Vegan Herby Dip:
1/2 cup vegan yogurt or sour cream
1 tbsp fresh dill or parsley, finely chopped
1 tsp lemon juice
1 small garlic clove, minced
Salt and pepper to taste

Mushrooms:
Preheat oven to 400°F (200°C) or heat oil for frying.
Set up a breading station:
Bowl 1: Flour
Bowl 2: Plant milk
Bowl 3: Breadcrumbs mixed with garlic powder, paprika, salt, and pepper
Coat the mushrooms: Dredge each mushroom in flour, then dip into milk, and finally coat in the seasoned breadcrumbs.
Bake or Fry:
To bake: Place on a lined tray, drizzle with olive oil, and bake for 20–25 mins, flipping halfway.
To fry: Heat oil and fry in batches until golden brown and crispy.
